Browsing through the mags and papers as i do when recovering from a boozy night out i stumbled across this recipe for Christmas pudding ice cream, tried it out today and WOW!!! its delicious...so delicious i got to make some more tomorrow (note to self - start diet lol). if you have no christmas pudding left use mixed fruit and cinnamon instead.
125g left over christmas pudding
150ml ready made custard (chilled)
150ml double cream (whipped until stiff)
liquor to taste (brandy, wiskey, bourbon, baileys)
mix the custard and cream then add the crumble in the christmas pudding (or stir in the dry ingredients)
freeze in a plastic container and stir every half an hour until it is the right consistency
store in the freezer for up to 3 months(if you can leave it there that long!)
