Calling all vegetarians....

I'm trying to practise twice weekly vegetarian only meals, to better my health and reduce the junk in the trunk. Not vegan, just vegetarian. Other than recipes with tofu (blech!), do you have any tried and true recipes or know of any really good cook books catering to vegetarians?
All messages have been lab tested and approved!

Have you looked thru the "What's For Supper" thread on this site? Im sure we have covered alot of this in the past few years. If you dont find what you are looking for, post in that thread and i'll see if I can find you something that deals with your specific vegies.

I'm not a vegetarian but I don't eat pork or beef, and rarely eat chicken.
I DO have mostly meatless meals. The easiest way to go the vegetarian route is to start substituting garbanzo beans, black beans or legumes for the meat you would normally put in a crockpot or casserole dish.
Nuts and seeds are a good source of protein too.
I love grilled veggie/fruit kabobs in the summer.

My favorite is The New Moosewood Cookbook by Molly Katzen. (used copies available on Amazon)

I use very little meats myself too but am not a vegetarian. I love salads and pasta and taters. Made a tater lasagna once that really turned out well but don't have the recipe anymore. It was bisically a lasagna recipe but replacing the noodles with taters and there was no meat. Also use a lot of beans in my cooking. That recipe book looks intersting.
