Thanksgiving Goodness!
Since I am a "lady of leisure" this year and Walmart had a good deal on turkeys I guess I'm cooking! What's on YOUR menu?
My 16 pounder finally thawed and, since I have a tiny kitchen and no job, I thought I'd get an early start. Today I baked the bacon cornbread and steeped the giblets. I do love a good giblet gravy. Bathed the poor dead bird and plucked all unnecessary feathers. Got the big guy all nestled into his cubby awaiting stuffing...savory apple bacon you know but I may throw in some mushrooms. Tomorrow the bird gets stuffed and roasted so I can trim it all out tomorrow before T-day's wonderful parades and such! Got brownies to bake with double swiss chocolate and pecans topped with raspberries and sauce. I do have a piece of pumpkin pie left over from last year but obviously it's not a big favorite of mine... Smashed taters, rolls...tis a given I suspect! DANG that dog who gnawed on my/our turkey leg even before it's cooked! |

I have 2 days of thankgiving! On Thursday we go to my moms house for dinner with the whole family. We have the usuals turkey, stuffing, mashed potatoes, sweet potatoes.
Then on Friday I cook a meal for my husbands family. His mom is handicapped and can no longer handle cooking a big dinner, so I am going to take everything to her house to cook. |

Yes, Scalloped Corm is Creamed Corn ... I also include diced onion, diced green pepper, 1 sleeve of crushed saltene crackers (per 2 cans of corn) and black pepper and garlic powder to taste. Mix well! You can add a few crushed crackers on the top as well if you want a crispy cover. Just put a few pads of butter on top to keep the crackers from burning. You can also sub "ritz" or "townhouse" crackers if you want to give it a sweeter flavor. In a greased 9x13 baking dish it takes about 35 mins at 350 F ... add 10 mins for each additional can of corn. |

Poo Michael - I'm coming to YOUR house next year! Just add a blueberry pie to that mix please?
scalloped corn...I have to find my recipe but isn't there supposed to be cheese in there? I haven't made that in sooooo long and I really used to like it too. Mostly my oven's used for storing paper towels now-a-days. I don't cook like this much anymore. Too much work/clean up for just one person. |

Yes, the "long" version calls for sweet corn and then you add heavy cream and crean cheese!!! The "short" version is a bit more healthy ... so I can eat more of it!!! ![]() |

Razzleberry pie? Never had it but I adore booberry pie. And there ain't nuttin healthy about creamed corn you know so make it as delish as possible! Look at dog food - corn is a filler. I love it anyway cause everyone needs fiber! |
